As a side dish or as a light meal, cold potatoes, chive cheese cream is a delight.
With smoked salmon or grilled meat in summer it's quick and easy.
Ingredients for 4 persons :
- 4 beautiful potatoes
- ½ bunch of chive
- 2 shallots
- 200 g of faisselle
- coarse salt
- Freshly ground pepper
Cold potatoes, cheese cream with herbs
- Wash the potatoes. Place them in a pot of cold water.
Bring to a boil, salt with coarse salt and cook until tender.
- Wash, pat dry and mince the chives.
- Peel and chop the shallots.
- In a salad bowl, pour the faisselle, add the chives, then the chopped shallots. Season with salt and pepper. Mix. Reserve in the fridge.
- Drain the potatoes, let them cool. Cut a hat off each one lengthwise. Hollow out the inside with a teaspoon and place the flesh in a bowl.
- Garnish each potato with the cheese cream. Decorate with chive sprigs.
