The pumpkin soup is just right when the fall is rolling around.
A true delight and concentrated in creamy flavor, this recipe can be made from the first pumpkin harvest.
Ingredients for 4 persons :
- Half of a pumpkin (Approximately 500 g)
- 20 cl of heavy cream
- 50 cl of chicken broth
- 20 g butter
- 1 onion
- 1 clovegarlic
- Salt, pepper

- Remove the ends of the pumpkin
- Then remove the seeds and stringy parts of the pumpkin
- Peel the pumpkin with a peeler or a knife if the skin is too thick
- Cut the pumpkin
- Mince the onion and crush the garlic then sweat everything in a pan with a large knob of butter
- Then add the chicken broth with the pumpkin
- Salt, pepper
- Bring to a boil and simmer for 20 minutes
- Pass the pumpkin in a blender
- Add the sour cream and adjust with a little water if the mixture is too thick
